The different qualities of the olive oil of SOMOHUILE were defined in order to clarify the choice of the consummator .
§ Extra Virgin: (Natural Product) Irreproachable taste, acidity lower then 1%.
§ Virgin Fine: (Natural Product) Irreproachable taste, acidity lower then 1.5%.
§ Virgin: (Natural Product) Good taste, acidity lower then 3%.
More than 3.3% of acidity, the olive oil must be refined. The oil obtained mixed with a virgin oil is called pure olive oil and can never be identified as a "Natural Product".
